In the recent years, lactic acid bacteria species such as Lactobacillus are considering one of important probiotics used in food processing sector to produce fermented products and play a significant role for transformation preservation products. Besides, there is huge exploration new molecules that promote health exhibit potential technological applications non-digestible carbohydrates. The carbohydrates provide various benefits balancing sustaining microbiota intestine increasing production short chain fatty acids (SCFA). aim this review some types an enhancer growth probiotics. These compounds can help improving many characteristics sensory textural properties.
